An Excellent Beef Soup

  • 2 32oz beef broth
  • 1 onion
  • 2 bags of carrots
  • 2 stalks celery
  • 1 can of petite tomatoes
  • 1 head of broccoli
  • 1 head of cauliflower
  • 4 cups of water
  • 1 teaspoon of beef bullion
  • 2 tablespoons of garlic
  • 1 can of corn drained
  • 1 can of spinach
  • 10 large potatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon of rosemary
  • 3 bay leaves
  • 2lbs of stew meat
  • 1 teaspoon of Italian seasoning

What you need to do first

Put your 1 32oz of beef broth into your pressure cooker, add your stew meat and pressure cook it for 30 minutes. Along with 2 tablespoons of beef bullion.

Cutting your vegetables

While your pressure cooker is working start cutting up your carrots, broccoli, onions, and cauliflower. You want to make sure that it is nice size chunks so that you can see those beautiful colors. Make sure that you rinse all of the vegetables because you always want to wash your vegetables after bringing them home from the store.

Now, you should be ready for the next step

Place your beef soup into a stock pot, add 1 more 32oz beef broth to your stew meat. You will then add your carrots, broccoli, and cauliflower to the stock pot because they usually take the longest to cook. Of course, you want to cook them until they are firm. Then you are ready to add the potatoes, corn, spinach, onion, and all the spices. Let it cook for 30 minutes, serve, and enjoy!

Melissa’s Spanish Rice with Chicken Surprise

What you will need for this awesome meal that my 15 year old daughter made:

2 family sized Virgo Spanish rice

1 package of chicken chunked up

1/2 bell pepper

1 jalapeno diced

1 can of rotel diced tomatoes (Hot)

1/2 cup shredded cheese

First, follow the directions on the Spanish Rice and add 3 more cups of water. Bring to a boil and then add 1/2 stick of  butter. Boil rice for 3 minutes then you will want to add your chicken chunks to the rice and boil for about 4 minutes. Take the biggest casserole dish that you have spread the rice, and chicken evenly throughout the dish.

Add your rotel diced Tomatoes (Hot) to the top of your casserole evenly, cover the casserole dish with foil, and then put it in the oven at 400 degrees for about 35 minutes.

After taking it out of the oven sprinkle your shredded cheese all over it and put it back in the oven just until the cheese is melted nicely.

Serve, and enjoy!

Let me tell you this dish was amazing and if you love hot foods this is one that you need to try. It was a wonderful meal that lasted for two days here in this house with three teenagers.

This is our Parmesan Chicken Pasta that we make every so often and it lasts about a week of course the children get tired of it but it works for our family.

One family pack of chicken breasts

Four cans of your choice of spaghetti sauce

One small package of mozzarella cheese

Four boxes of Penne pasta (or your choice of pasta)

Garlic (to your tasting)

Italian seasoning (to your tasting)

Cook your chicken, add your seasonings to your tasting, and simmer

Start your pasta and while it is cooking add your sauce to your chicken

Then use a casserole pan to place your pasta in and cover it with the chicken, and sauce.

Cover it with your cheese (your choice on the cheese we use two or three different types of cheese).

Pop it back in the oven to melt your cheese and there you have it dinner for the next week. You can put some in the freezer for a later time. It is a wonderful dish and it is a family favorite.
